Week 16 Recipe: PRIME RIB

Christmas is here so it must be time for Prime Rib. There are many recipes for this delicasy but I like mine.

1 6 to 8 lb Rib Roast1
1 tsp Course Salt
1 tsp Ground Pepper
1 tsp Garlic Salt
1 tsp Onion powder
Bring Roast to room temperture. Mix spices togethere and spread all over the roast

Place in preheated oven at 450 degrees for 1/2 hour. Now most recipes call for dropping the temperture to 350 degrees until done (for 2 hours), but I like dropping the temperture to 200 degrees and cooking for  @ 4 to 5 hours. Slow cooked is the best!!

Buy the Au Jus sauce at the store, its easier

Week 16 Beer Of The Week:

By Mike Abrachinsky
Tailgate Beer Meister

Southern Tier Brewery variety pack

May include any of the following: S. Tier IPA, S. Tier Porter, Old Man Winter Ale, Harvest Ale, and Heavyweizen.  A fine ale producing brewery out of Ithaca, NY.  I have tried just about all of their beers and make it mandatory to stock up on the variety packs for the winter season.  The ales are traditional, hop-infused and a tad thick, but very full of flavor.  Great for accompanying pot roasts and other "beefy" dinners.  Let these ales "breathe" a bit after pouring them into your pint and your taste buds will turn into a post victory Super Bowl celebration.  Old man Winter ale is probably the best winter ale I have ever tasted and I guarantee it will hit you like a Brett Favre pass right in the chest if you "sample" too many !
